Our Mom Edythe’s raisin squares recipe, which were excellent. Mom said she liked this recipe, she liked raisin squares but she didn’t like raisin pie, to which she laughed and wondered why. She made this recipe for decades, for church events, company and just every day fare when she fancied.

Old Fashioned Raisin Squares Filling Recipe
3 cups raisins (like one would use for pie)
3 cups water
3 tablespoons lemon juice
3/4 cup brown sugar (or 1 cup for sweeter)
1/3 cup cornstarch
1/4 cup flour (or 2T more cornstarch)
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
4 tablespoons sugar
1 cup water
2 tablespoons sugar (for topping)
Method:
Combine raisins, 2 cups water, lemon juice, brown sugar in a saucepan. Bring to a boil, turn down heat, simmer 5 min.
In separate bowl, combine flour, cornstarch, nutmeg cinnamon, sugar, add to raisin mix boil gently 5 min
in an 8×12 pan (or 9×12) layer pastry on the bottom of the pan, add filling, layer pastry on top, sprinkle the remaining 2 tablespoons of sugar over top.
Bake 400F until the pastry is baked as the filling is already cooked. Mom doesn’t say how long to bake the pastry for. Likely 20min or so, but it would behoove the baker to monitor it.
