These chocolate beauties have a “peanut butter cookie” general texture and we find they are very satisfying 🙂

Double Chocolate Almond and Honey Cookies High Protein
3/4 cup real butter softened (or 1/2 cup butter, 1/4 cup real lard)
1 cup almond butter (or mix of almond butter and unsweetened peanut butter to your preference, we used Kirkland Costco’s brand we like 3/4 cup almond butter to 1/4 cup peanut butter)
1/2 cup honey (we use Kirkland for this and save our local raw honey for toast)
1 cup cane sugar (or mix of cane sugar & maple sugar – not syrup; or 1/2cup white half cup brown sugar)
2 eggs
2 cups almond flour
1 cup flour of choice – gluten free is what we used, but 1 betcha another cup of almond flour would be preferred
3/4 cup organic dark cocoa powder (quality matters, get a “whole ground bean” good brand like cocoa camino)
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 teaspoons vanilla (more or less, we like more)
1 cup chocolate chips
Combine butter, nut butters, sugar til it has emulsified and is fluffy, then add eggs and beat until smooth
Add flour, cocoa, baking soda, baking powder and salt, stir until well combined.
Add vanilla, and chocolate chips, stir.
Instructions – aka what we do:
Preheat oven to 350F
Scoop cookie dough using small 1 1/2″ cookie scoop (mini icecream scoop) onto parchment lined baking sheets. Flatten with fork or wet fingers.
Bake for 8-9 min approx – each oven is different.
Let COOL COMPLETELY before removing cookie from parchment paper. Cool baking sheets for 5 min before moving the parchment sheet to the racks.
Wait until the cookie is completely cool before removing from the parchment as the honey must come back to room temperature to “set”.
If using a medium scoop – cooking time will be more towards the 10-12min range.
Chocolate Factoids: most chocolate producers extract the cocoa butter and leave the “sawdust” as cocoa powder… using a GREAT quality brand means they grind the whole bean leaving the marvelous cocoa butter inside with the rest of the goodness.
