Don’t call take-out, save your money… as long as you have a few ingredients on hand – this will be perfect (and it’s delicious to boot!)
Known as a dinner dish, it’s also great for breakfast, brunch or lunch too.
Hash Brown Potato Casserole Recipe #1 – Easy
(see further down #2 = Super Easy)
- 32 oz (small) bag hash browns (thawed) – in freezer section of grocery store
- 10 oz can cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup melted margarine or butter
- 1 1/2 teaspoon salt
- 1 medium onion diced (or 2 Tablespoons dried onion flakes)
- 2 cups crushed cornflakes
- 1/4 cup melted margarine (or butter)
Preheat oven to 350°F – Grease 13 x 9″ baking dish
- Combine all ingredients except cornflakes and 2nd portion of margarine.
- Spoon into baking dish.
- Combine cornflakes & margarine
- Sprinkle over potatoes
- Bake 45min or until bubbly – Serves 12
We serve in squares like lasagna, it reheats beautifully
SUPER EASY Hash Brown Potato Casserole Recipe #2 – main course
- 32 oz (small) bag hash browns (thawed) – in freezer section of grocery store
- 1 can chicken a la king (found in the soup/stew section)
- 2 cups shredded cheddar cheese
- 2 Tablespoons dried onion flakes
- 2 cups crushed cornflakes
- 1/4 cup melted margarine (or butter)
Preheat oven to 350°F – Grease 13 x 9″ baking dish
- Combine all ingredients except cornflakes and margarine.
- Spoon into baking dish.
- Combine cornflakes & margarine
- Sprinkle over potatoes
- Bake 45min or until bubbly – Serves 12
Hubbyloves this one, as the extra veggies & chunks of chicken are nice. Seems to have even more flavour.
